  • 2 cups fresh pineapple chunks
  • a handful fresh mint leaves about 8-10 leaves
  • 2 tbsp honey or to taste
  • 1 tbsp lime juice optional, for brightness

Method
 

  1. Start by peeling and chopping your fresh pineapple into small chunks, about two cups' worth. Place the chunks into your blender.
  2. Finely chop about 8 to 10 fresh mint leaves and add them to the blender with the pineapple.
  3. Pour in the honey and lime juice, then blend everything together until the mixture is completely smooth and vibrant, about 30 seconds. You should see a fragrant, slightly frothy liquid.
  4. Give the mixture a quick taste and add more honey if you'd like it sweeter. Blend briefly to incorporate.
  5. Using a spoon, pour the mixture evenly into your popsicle molds, leaving about a quarter inch space at the top to allow for expansion during freezing.
  6. Insert the sticks into the molds, then place them in your freezer. Let them freeze for at least 4 hours or overnight for the best texture.
  7. Once frozen solid, run warm water around the outside of each mold for a few seconds to loosen the popsicles.
  8. Carefully pull out the popsicles and serve immediately to enjoy their bright, icy, and herbal flavor—perfect for a hot summer day.

Notes

For an extra tropical twist, swap honey for agave syrup or coconut nectar. To make creamier popsicles, substitute half the water with coconut milk. Always use ripe, fragrant pineapple for maximum sweetness and aroma.
